With Bill riding his bicycle everyday and doing average of 50 miles, I need to be sure I feed him nutritious meals. As people who travel in rv's they can relate to not having much space and especially the refrigerator. What I have done is use a few dishes he likes and put a little variety to them. I incorporate fish, rice, potatoes, vegetables, fruit and whole grains. When we are in an rv park I cook up dishes ahead of time and freeze some of them. This way when we are dry camping it only takes a few minutes to heat up and eat. The meals consist of goulash, tuna casserole, stirfry, chicken, turkey burgers and salads.

Goulash  serves 6                         No Bake Tuna Casserole serves 6                                     Pancakes  serves 4             

1lb Ground Sirloin                         3-6oz cans white albacore tuna (drained)                          2c. Bisquick Lite                        
1/2 onion                                    1-15oz can of green peas (drained)                                 1 egg
1/2C Green Bell Pepper                  1lb of elbow macaroni (cooked according to directions)      1/2 banana (ripe)
1/2C Red Bell Pepper                     3-slices Vlasic Stackers Kosher Dill (chopped)                     1-4oz blueberry yogurt
1/2C Carrots                                 3/4C Kraft Real Mayo ala Omega-3                                    3/4c Soy Milk Lite
1/2tsp sea salt                             
1/2tsp black pepper                        Blend all ingredients together and chill.                           Mix all ingredients together and
4oz can diced green chilies                                                                                               cook on non-stick griddle. You
1-15oz can black beans                                                                                                    can use different flavors of
1-14oz can diced tomatoes                                                                                               yogurt.  
1-15oz can tomato sauce
1-2tsps of tabasco sauce
1/2pkg of elbow macaroni (cooked)

Cook sirloin, onion, bell peppers, carrots, sea salt and black pepper in a large skillet. Cook macaroni according to directions. Add remaining ingredients and simmer until heated through. (To give it a chili taste add 1tbls of chili powder).

Bill wanted me to post his recipe so here goes:   2 slices of multi grain bread, 2 teaspoons of crunchy peanut butter, and 1 teaspoon of honey. Spread the peanut butter and honey on the bread and eat.
